Growing up a picky eater I never wanted to try new foods. If I hadn’t had it before, I hated it and was unwilling to try it. This year at college I have been challenging myself to try out a new recipe each week, in reality it has been every month, but hopefully that will change this semester.
This week I decided to try something totally different, a mock potato salad recipe! I tried out a Low Carb Cauliflower Potato Salad recipe. I have been eyeing recipes like this all over Pinterest and I finally decided to try it for myself. I think it came out pretty good. I was kind of surprised how much it would make and pleasantly surprised at the macros. Per serving the macros are: 156 cal/ 8.3f/ 13.4c/ 9p. A full serving kept me full for quite a while, something that seems to be hard to do for my stomach lately.
Seriously guys, you can eat this on its own, as a side dish or even make it into an egg salad sandwich. You really cant go wrong any way you eat it!
